FALL POWER WRAPS

These Power Wraps are loaded with all the good stuff, plus they taste like fall. Perfect for October, and they give you a healthy boost. You gotta try them!

FOR THE WRAPS

4 oz 80 Acres Farms POWER CRUNCH

Whole wheat tortilla wraps

1 large sweet potato, sliced into wedges

1/2 cauliflower, chopped

1/2 red onion, sliced thin

1/4 cup pumpkin seeds

23 tsp chili powder

2 tsp garlic powder

1 tsp cinnamon

Salt and pepper to taste

Olive oil

FOR THE SAUCE

1 cup Greek yogurt, plain

12 Tbsp maple syrup

1 tsp chili powder

1 tsp garlic powder

1/2 tsp cayenne

Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F. Line two baking sheets with parchment paper. Place sweet potato wedges on one sheet and cauliflower on the other. Drizzle both with olive oil and sprinkle with spices reserving the cinnamon for the sweet potatoes only. Toss to coat and roast for 20-25 minutes until golden.
  2. Add all sauce ingredients to a bowl and stir until combined, adjust according to your taste.
  3. Layout out your wraps. Spread sauce on first. Next layer with POWER CRUNCH. Add your roasted vegetables and top with sliced red onion and pumpkin seeds. Enjoy!
